I finally made it to Miami for my birthday!
If you keep up with me and my little corner of the internet, you’ll remember that I was trying to celebrate my birthday in Miami last year. However, I didn’t realize that my driver’s license had expired until the last minute so I had to cancel the entire trip and I was so disappointed.
This year, all of my affairs were in order and since husbae and I have been steady grinding all summer, we figured we really needed this little baecation birthday getaway for me.
I forgot how much I love this city! Before I met Steven, I was visiting frequently because I was going to move here for a reporter job in one of the Spanish news stations. Miami always makes me feel that being Latina is like wearing a badge of honor. Everywhere I go I get to speak Spanish and rock out to Salsa, Reggaeton, and Merengue. Our last driver and I were basically having a Karaoke session to all of Marc Anthony’s greatest salsa hits. I don’t know if we were annoying Steven but I know he loves when I speak Spanish.

Enough back story, let’s get into our night at Carbone!
If you’re wondering if it’s worth the hype, it totally is—from the ambiance, to the food, to the service. For appetizers, they already bring you some parmesan cheese, salami, and pickled cauliflower. We just added an order of Caesar salad and an order of calamari to it. The Caesar salad is made table side and so freaking good! Don’t get me started on the calamari. Whatever that sauce is that they drizzle on top when they bring it out made it the best calamari I’ve ever had.
The spicy rigatoni looked so bomb on Instagram so Steven and I both ordered a plate each with an order of meatballs to share. It did not disappoint. My stomach is literally rumbling as I’m writing about it.
To end our meal, I ordered the lemon cheesecake with an espresso. It was the perfect pairing to such an amazing meal.

I can see why it’s hard to get a reservation here. Thank goodness my husband is the planner between the both of us so he made sure to make the reservation a month in advance.

If you’re ever in Miami, Las Vegas, or New York, make sure to make reservations at Carbone.
I promise you’ll love it as much as I do.
